Thursday's Thoughts

Sorry for my short hiatus from the blog world! I have a lot going on and blogging has been put on the back burner for the time being. I'm right in the middle of some big life changes (details soon!) so I'll be hit and miss for the next few weeks. I'm still reading all of your blogs and trying to comment on as many as possible.

Thursday's Thoughts
I need a haircut.

The Hunger Games lived up to the hype (for me, anyway)! I loved every minute of it.

Liam Hemsworth is cute and he has an accent. How did I not know any of this? I only knew of him because he is Miley's boyfriend. Lucky girl. (And Thor is his brother!)

Another movie that is awesome? 21 Jump Street. It was hilarious. I think I almost wet my pants from laughing so much. TMI?

I really want to visit New Orleans and Charleston!

Doesn't carrot cake make you think of Easter? I don't know why, but it does for me. I had a really good recipe for carrot cake a few years ago, but have since lost it. I'm trying to decide between this one and this one for an upcoming Easter get-together.

This season of Dancing with the Stars has been so boring. I really hope it gets better.

I gave up on the March Photo a Day challenge on Instagram. It was tedious. But here are a few pictures I've taken recently:


The eggplant parmesan subs are brilliant! I came up with the idea when Chris and I were desperately walking through Trader Joe's trying to figure out dinner one night. RECIPE: Just take the eggplant cutlets (found in the freezer section by the pizzas) and bake them for 12 minutes. While that's happening, open a jar of marinara sauce and heat it up on the stove top. Chris usually adds a bunch of herbs and stuff to make it really tasty. Buy the parbaked french baguette and toast it in the oven for about 7 minutes. When the loaf is baked, cut it into sandwich size sections and then in half. Add 2 to 3 of the eggplant rounds to each sandwich, top with hot marinara, and throw on some shredded mozzarella cheese. Add the top half of the bread and put it back in the oven for a few minutes to get all toasty and melted together. It's delicious! And only takes about 20 minutes from start to finish. Also, the leftovers keep brilliantly and heat up nicely in the microwave the next day.

I didn't win the Mega Millions Lottery drawing on Tuesday night. Boo! But the good news is that no one else did either! The pot is now up to $476 million for tomorrow night. What in the world would you do with all that money?

My birthday is in 27 days! Please, please, please let there be an iPad under the birthday tree :) Yes, I'm still obsessing over it. And yes, I actually want the 2 over the newest one.

I'm meeting up with Kate for brunch on Sunday! I can't wait to see her and catch up on life!

New Orleans is one of my favorite cities in this country - it's fantastic. I was just there last month (for like 12 days, work and fun!) and can't wait to get back. http://bakerlg.blogspot.com/2012/03/fun-in-big-easy.html

Charleston's awesome too. The food in both of those cities is just unbelievable!

21 Jump Street was such a hilariously good surprise. I can't remember the last time i laughed so hard.
Also, those eggplant parm sandwiches look delicious.Totally borrowing that idea!

Missed reading your thoughts over the last week. Glad that you checked in with so many different thoughts.
I did not like the Hunger Games. The plot itself is disturbing and dark. It was hard watching the movie unfold knowing the theme of the movie. I could be the only one in America that feels that way.
